The story
In the heart of Polanco, Entremar brings the energy of Mexico’s coastal kitchens to a refined yet relaxed setting. This is a place where the day’s catch dictates the menu, and the kitchen works with seasonal seafood from the country’s Pacific and Gulf waters. The restaurant’s commitment to sourcing and technique earned it a Michelin Recommended distinction in 2026, a nod to its consistent, unfussy excellence.
The experience begins at the raw bar, where tiraditos and aguachiles are prepared with precision. The Ceviche Contramar—a signature—pairs fresh fish with leche de tigre, celery, and chile manzano. For those who prefer a heartier start, the camarones para pelar (poached shrimp with aioli) are a simple, satisfying choice.
Entremar’s menu moves through tostadas, salads, and a strong selection of tacos inspired by Ensenada. The battered king fish tacos and the al pastor king fish tacos, finished with pineapple and cilantro, are direct and flavorful. Soups and pastas offer comfort: a spicy shrimp broth, or fresh pasta with clams in white wine and butter.
The grill is central to the kitchen. Whole pescado a la talla comes lacquered with a choice of rubs—the Contramar style combines red adobo and parsley—and is cooked over wood. Grilled octopus with chile meco adobo and sweet potato is another standout. The kitchen also turns out dishes like fried tuna carnitas and soft-shell crab, each handled with the same straightforward respect for the ingredient.
Desserts are simple and satisfying: coconut flan, pecan brownie, or a lemon tart. The meal unfolds in a dining room that feels like a natural extension of the coast—bright, informal, and welcoming. Entremar is open daily from noon to 8 pm, and reservations are recommended.
