The story

Filigrana Mexico City – Contemporary Mexican Cuisine by Martha Ortiz | Bib Gourmand

A Cuisine Woven Like Fine Threads

Filigrana takes its name from the delicate art of twisting gold and silver threads into intricate jewelry. In this Mexico City restaurant, the metaphor extends to the kitchen: flavors, stories, and traditions are woven together with the same precision and care. Located inside the Cauduro building in Roma Norte, the space is anchored by an extraordinary mural, El Condominio, making the visual and culinary experiences inseparable.

Chef Martha Ortiz’s Vision

Chef Martha Ortiz, a pioneer in reimagining Mexican cuisine, serves as the creative director and mentor of Filigrana. Her career has been defined by celebrated concepts like Águila y Sol and Dulce Patria, and here she curates both the menu and the aesthetic—down to the exclusive tableware created by artisans. The kitchen team operates like a workshop of old masters, constantly learning and evolving. The result is a contemporary Mexican cuisine that feels both rooted and fresh, earning a Michelin Bib Gourmand for its quality and value.

Dining in Moments

The menu is organized into “moments”: breakfast, lunch, dinner, and a Sunday proposal, each designed as a collection of dishes that build an emotional correspondence with the palate. There is also a cocktail program and a sweet finale that “hilos fino en los sabores de México.” Special seasonal menus, under the concept we eat color, explore the synergy of Mexican flavors and colors through temporary taste exhibitions.

Traditional Bakery with an Artistic Twist

Filigrana rescues the lineage of traditional Mexican panadería. Their famous art-conchas are decorated with graphics by international artists, turning pastries into edible murals. Alongside them, you’ll find prickly pear and xoconostle pinwheels, piloncillo pig-shaped cookies, and donas de peltre, among other delicacies. It’s a celebration of craft and taste, served in a space where every detail—from the high-contrast colors to the curated tableware—feels intentional.
