The story
Guzina Oaxaca brings the flavors and culture of Oaxaca to Mexico City’s Polanco neighborhood. The restaurant’s name comes from the Zapotec word for “cocina” (kitchen), and that sense of place runs through every detail — from the clay tableware and handcrafted mezcal glasses to the ingredients sourced directly from small producers across Oaxacan villages. The space offers outdoor seating, making it a welcoming spot for breakfast, lunch, or dinner.
The restaurant opened over a decade ago with the mission of being an Oaxacan embassy in the capital. Now under the direction of Oaxacan-born chef Carlos Galán, Guzina Oaxaca has earned a Michelin Recommended distinction for 2026, recognition that speaks to its consistent commitment to authentic Oaxacan cuisine.
Supporting family economies in rural Oaxaca has been central to Guzina Oaxaca since day one. The kitchen works with small-scale suppliers for key ingredients, and the restaurant stocks more than 50 varieties of mezcal, all from family-run brands and small producers. This dedication extends beyond food: the ceramics, glassware, and even the decor reflect Oaxacan craftsmanship.
The menu spans traditional breakfasts through to more contemporary lunches and dinners, always respecting local products. Whether it’s a classic Oaxacan breakfast or an evening meal with a modern touch, the cooking stays rooted in the region’s culinary heritage.
Chef Carlos Galán, a native of Oaxaca, leads the kitchen with a deep understanding of his home state’s gastronomy. His approach honors tradition while allowing room for evolution — the result is Oaxacan cuisine that feels both familiar and fresh. The restaurant has become a reference point for Oaxacan food in Mexico City, drawing diners who appreciate the balance of authenticity and creativity.
