Chef Atzin Santos and the Philosophy of the Land

Chef Atzin Santos brings more than two decades of experience to the kitchen. His style, as he describes it, is “experiential toward the Mexican product.” He believes that if he hasn’t lived an ingredient, he cannot transmit it. This conviction led him to explore Mexico’s diverse regions, and at Limosneros, he channels that knowledge into a cuisine that prioritizes artisanal ingredients and local techniques. The restaurant’s commitment to the land extends beyond the plate: they operate Omé, a garden dedicated to rescuing endemic seeds and supplying other top restaurants across Mexico.

The Iconic Dish: Huitlacoche

Limosneros does not shy away from bold, traditional flavors. Their signature dish is huitlacoche—the prized corn fungus that is a cornerstone of Mexican cooking. Here, the whole ear of corn is slow-cooked for 15 hours at 75°C with epazote and onion, then finished with Cotija cheese, butter, and more epazote. The result is a deeply savory, earthy preparation that has become a must-order. Diners are encouraged to think of huitlacoche when they think of Limosneros.
