Since 1995, Los Danzantes has occupied a prime spot on Parque Centenario in Coyoacán, a neighborhood known for its cobblestone streets and artistic legacy. The restaurant’s name hints at its philosophy: a dance between ancient and contemporary Mexico, expressed through every dish.
The kitchen draws inspiration from pre-Hispanic ingredients and techniques, reinterpreting them with modern precision. The menu is a celebration of Mexican biodiversity, with produce sourced from local chinampas—the floating gardens of Xochimilco. Corn, a cornerstone of Mexican cuisine, comes from San Juan Ixtenco, Tlaxcala, and appears in tacos, sopes, and tlayudas made from heirloom varieties.
Standout starters include Guacamole con Chapulines, where Oaxacan grasshoppers add crunch and earthiness, and Fondue de Huitlacoche, a smooth blend of cheeses and corn smut served with sourdough toasts. For mains, the Pulpo Chamuscado—grilled octopus marinated in a dried-chile adobo—sits alongside a celeriac purée and chinampa greens.
