The story
KOLI Cocina de Origen is a gastronomic concept created by the Rivera Río brothers, young chefs with a recognized national and international trajectory. They take pride in exploring the cuisine of northeastern Mexico—its flavors, culture, and traditions—transforming them into a unique tasting menu. The restaurant currently holds a Michelin Star and appears on lists of Latin America's best restaurants.
Their current season, “Geometría,” finds balance where form, technique, and flavor converge. Each dish begins at the origin. As the team describes it, geometry is the way they give shape to their cooking: starting with the product, built through technique, and expressed on the plate with clarity. They work with proportion, texture, and temperature, seeking equilibrium between taste and structure. Every preparation responds to a precise decision where fire, time, and matter define the result. It is a season that orders, simplifies, and gives meaning to each element.
Guests choose from several degustation options: 9 courses for $2,100 MXN, 13 courses for $2,500 MXN, or a Wagyu option for $3,500 MXN. Custom menus are also available. Chef Rodrigo Rivera Río leads the kitchen, creating unforgettable flavors in a family setting.
