Labo Fermento calls itself more than a laboratory of fermentation—it’s a laboratory of life. Part restaurant, part shop, part gathering space, this Oaxaca City establishment bridges two worlds: the rich agricultural bounty of Oaxaca and the time-honored fermentation traditions of Asia. The restaurant’s name signals its philosophy: every dish and drink is prepared using house-made ferments.
Located at 5 de Mayo 409 in the Centro neighborhood, the restaurant operates Tuesday evenings, and Wednesday through Saturday from lunch into the evening. The shop, at M. Bravo 401, is open Monday to Saturday for browsing and buying. Inspired by the small groceries of Tokyo, Seoul, and Shanghai, the store stocks Labo Fermento’s own shoyu, miso, kombucha, pickled seasonal vegetables, and more—alongside imported Japanese, Korean, and Oaxacan ceramics, utensils, and textiles.
Labo Fermento offers a la carte dishes and a tasting menu of six or nine courses, with optional alcoholic or non-alcoholic pairings. The tasting menu requires a reservation. All plates are built around the fermenting kitchen: miso aged for months or years, fish sauce, garum, and shoyu. These ingredients are applied to local Oaxacan produce, resulting in an Asian-accented cuisine that feels rooted in the region.
In 2026, Michelin awarded Labo Fermento a Bib Gourmand, its designation for restaurants offering good quality, good value cooking.
