In the heart of Oaxaca City, Levadura de Olla Restaurante is a dedicated homage to the culinary traditions of the Sierra Sur, particularly the chef’s home community of San Mateo Yucutindoó. This commitment to deep-rooted, rural Mexican cuisine earned the restaurant a Michelin Star in 2026, a recognition of its exceptional quality and singular vision.
Chef Thalía Barrios has created a space that functions as an “infinite shelf” for Oaxacan gastronomy. The restaurant’s menu is built on ingredients sourced from the 8 regions of Oaxaca, many coming from lands free of pesticides, where native crops and wild harvests are nurtured by natural rains. The kitchen expresses a proud heritage of ancestral techniques, working with diverse native corn, chiles, seeds, tomatoes, herbs, and squashes.
The menu is thoughtfully structured, moving from popular Oaxacan dishes like a Tasajo taco with Sierra potato and chapulín salsa, to "Salvaguarda" plates—lesser-known regional specialties such as a savory atole of rastrojo tomato with chicken and oregano. The "Ceremonial" section features dishes tied to fiestas and weddings, including a traditional mole from San Mateo Yucutindoó served with chicken and dry pozole. A "Creative Proposal" section offers the chef’s own interpretations, like a tamal of requesón and squash blossom with mole negro and coloradito. Traditional beverages, from agua de maíz to tepache and the herbaceous ticunchi, complete the experience.
