The scent of mesquite wood fills the air, infusing every dish with a fine, smoky flavor that defines the kitchen’s approach. The restaurant’s Michelin Recommended status recognizes the mastery of this elemental style.

Chef Poncho Cadena draws on ingredients from the Baja California peninsula: organic vegetables, seafood, and meats that carry the character of the surrounding desert and sun. The menu is a study in contemporary cooking, where vegetables like beets with beet butter, corn charred over coals with mustard vinaigrette, and broccoli with short mole share the stage with seafood and cuts from the “Black Market” section—sweetbreads, Kurobuta pork with a coffee rub, and the commanding T-Rex, a 17-ounce New York or 24-ounce rib eye.

The space itself reflects the obsession with wood: stacks of it line the aisles, and three separate grills handle vegetables, fish, and meat.
