The story
Cocina de Autor Los Cabos, set within the Grand Velas resort on the Corredor Turístico, is a dedicated fine-dining concept that earned a Michelin star in 2026. The restaurant is led by two-Michelin-starred Head Chef Sidney Schutte of the Netherlands, who brings a global perspective to Mexican cuisine. Executive Chef Francisco Sixtos, a Jalisco native, executes the vision daily — his career includes stints at Michelin-starred kitchens in Europe, leading Lumière in Cancun, and a role at The Carlyle in New York. Together, they craft an eight- to ten-course tasting menu that is both playful and precise.
The evening begins at the bar, where mixologists prepare a cocktail before guests are escorted to their table. The tasting menu showcases the finest local produce, meats, and seafood from Baja California and beyond. Each dish reflects the culture and landscape of the region, presented with a sense of invention and restraint. A wine pairing is available for guests 18 and older, and the curated wine list is noted for its interest.
The atmosphere is elegant but not stiff. The dining room and outdoor seating are air-conditioned, and valet parking is provided. The dress code calls for collared shirts, trousers, and closed footwear for men; dresses, skirts, or evening trousers for women. No beach sandals or tank tops are permitted.
The Michelin star is a recent addition to the restaurant’s accolades, which also include five diamonds from the AAA.
