The story
Since its inception, Mision 19 has provoked a vanguard change in the cooking of Baja California, according to chef Juan Carlos Silva. Located in Tijuana's Zona Urbana Río, the restaurant earned a Michelin Recommended distinction in 2026, affirming its role as a leader in modern Mexican cuisine along the border.
The menu is built on a simple conviction: the star is the ingredient, and most do not travel more than 200 kilometers. The kitchen champions local farms, pure-breed meats raised without hormones or antibiotics, and seasonal produce from nearby valleys and orchards. This commitment to sustainability and terroir defines every plate.
Cold starters like the Parfait de Atún Aleta Azul pair avocado meringue with Persian cucumber and spiced jocoque. Warm entries include Pacific Oysters al Carbón with a beef tortita and salsa verde, or Pulpo al Carbón with garlic jelly and burnt habanero oil. Tacos feature soft-shell crab with sauerkraut, or prensado chicharrón with pulpo and salsa macha. Larger plates include Pasta Mision 19 with fresh pappardelle, Popotla spider crab, and sun-dried tomato pesto. Desserts like the Butterscotch Mousse with chocolate sponge and vanilla bean crème fraîche close the meal.
