At Elsa, Chef Marcel Ravin has created what he calls “un jardin marin en Méditerranée” – a sea garden in the Mediterranean. Perched like a balcony above the water at Monte-Carlo Beach in Saint-Roman, this Michelin-starred restaurant (awarded one star in 2026) is a deeply personal expression of Ravin’s culinary identity.
Born and raised in Martinique, the triple-starred chef brings a profound respect for fishing and maritime culture to every plate. His menu celebrates the ocean with dishes that pair sea and land in unexpected harmonies: tuna Rossini, celery infused with plankton and iodine, and seafood steamed in seawater. Each bite reflects a restrained, creative reverence for the surrounding waters.
The setting matches the cuisine’s elegance. Inside, designer India Mahdavi reimagined the glamour of the 1930s Riviera: shades of azure, soft light, and clean lines that evoke the coast. But the real draw is the vast terrace, where the Mediterranean stretches to the horizon. Here, lunch under the sun or dinner beneath the stars becomes an immersive sensory experience, the murmur of waves and the salt breeze completing the picture.
