At Nur in Fes, Chef Najat Kaanache builds a creative Moroccan cuisine around the agricultural diversity of the Middle Atlas. She describes the country as the mouth of Europe, a region shaped by layered histories that now inform her kitchen. The team visits local purveyors each morning to select seasonal seafood and regional proteins. These fresh ingredients drive an improvisational tasting format that shifts daily with the harvest.

The Tasting Format

Guests follow a degustation menu featuring approximately ten creations that unfold over two and a half hours. The kitchen deliberately blends traditional techniques with modern plating to highlight a contemporary approach to Moroccan cooking. Every plate relies on produce sourced directly from within the Medina walls. Staff adjust the sequence to accommodate dietary preferences when given 24 hours advance notice.

A Byzantine Sanctuary

The dining room balances a chic contemporary layout with preserved structural details dating back to the Byzantine period. Visitors enter through a stone passage in the old city to reach this quiet time capsule.
