The story
At Neder in Alkmaar, the guiding principle is simple: the Netherlands as supplier. From the first sip of wine to the last grain of salt, everything comes from domestic soil. This commitment to local country cooking earned Neder a Michelin Recommended distinction in 2026, a recognition that feels less like an award and more like an honest reflection of the kitchen’s daily work.
Owner and executive chef Brian leads a small team that includes a keukenmeester, a drankmeester, a fermentatiemeester, and even a dedicated wildplukker (forager). Together, they draw inspiration directly from the Dutch landscape—its fields, forests, and coastal waters.
Neder serves a fixed tasting menu of six small courses, preceded by aperitifs and amuses. All guests begin dining simultaneously at 19:00, creating a focused, communal rhythm. On Saturdays, a shorter lunch menu is also offered at 13:00.
The menu changes with the seasons and the forager’s finds. It typically includes meat, fish, and shellfish, but a full vegetarian alternative is available—just note dietary needs when booking. (Vegan, cow’s milk protein, and egg allergies cannot be accommodated due to the menu’s intensive preparation.)
Pairings are equally rooted in the Low Countries: natural wines, beers, and ciders from the Netherlands, Belgium, and Luxembourg. For a deeper dive, the exclusive pairing features the rarest wines of the region. The non-alcoholic pairings are crafted entirely in-house, designed to complement each dish.
Prices: dinner menu €99, optional extra course €16, lunch menu €69. Pairings range from €50 (non-alcoholic) to €110 (exclusive). A wine card with the best wines of the Low Countries is also available.
