A5 YAMA in Naarden-Vesting delivers a precise Japanese cuisine experience across just eight seats hidden within the UNESCO-listed ramparts. Executive Chef Hiroaki “Yama” Yamamoto spent eight years mastering classical techniques at Amsterdam’s Michelin-starred Yamazato before earning his own star in Rotterdam. He now channels that rigorous training into seasonal cooking, guided by the principle of mottainai. Open flames shape much of the preparation, with binchotan grills lending subtle smoke to delicate proteins.
The summer to autumn progression begins with tsukune alongside chicken skin crisps, followed by lobster korokke beside seared wagyu tataki. Bluefin tuna appears as warayaki nigiri topped with osietra caviar, while IJsselmeer eel transforms into kaffir lime nigiri and rich nikogori sauce. Pike-perch rests on shokupan bread with miso and sansho, bridging local waters with Japanese cooking traditions. The meal closes with sudachi-inflected yellowtail sunomono and a windmill spelt ramen extraction.
Co-owner Angela Oosterling shapes the guest journey through her Dutch-Peruvian background and academic focus on nutrition and visual arts. She aligns ceramic choices, beverage pairings, and service pacing to honor Japanese culinary etiquette. Gault&Millau recently awarded the venue a score of fifteen, noting how the compact layout intensifies focus on each course.
