The story
De Goede Gooier sits at the edge of the Blaricummerheide, surrounded by the Goois Natuurreservaat. The thatched-roof building is a natural starting point for walks and bike rides, but the real draw is what happens inside. Under that roof, Fabrice Patay, Claudia Gräser, and their team of passionate chefs work to create what they describe as “a culinary taste experience” – one that has earned the restaurant a Michelin Recommended distinction for 2026.
The team’s philosophy is straightforward: constant quality, whether serving ten guests or eighty. “Every day improvement. Good quality and everything for an affordable price,” they say. That dedication shows in every dish.
The menu follows the seasons closely. Chefs research new trends and flavour combinations at the start of each season, working with the freshest local ingredients. Seafood is sourced according to the “Vis & Seizoen” principle – fish caught responsibly at its peak, never during spawning.
Starters include a house classic: the “Goede Gooier Klassieker” – house-smoked salmon with Dutch shrimp and langoustine, lobster mayonnaise, and crispy herb filo pastry. The terrine of duck foie gras with fruit compote and brioche toast is another favourite. For mains, the sea bass fillet with herb risotto, courgette, and beurre blanc sits alongside a confit duck leg with mustard jus, or a rose veal loin with rösti and woodland mushrooms. The “Menu du Marché” changes daily, offering three, four, or five courses.
