The story
On the third floor of Het Veem, a former warehouse overlooking the water in Amsterdam's Houthaven district, BAK has been quietly doing things differently since 2012. The setting is industrial and unpretentious — a fitting backdrop for cooking that lets the ingredients speak.
The kitchen works exclusively with local products, sourcing from passionate farmers, foragers, hunters, fishermen and gardeners. Vegetables have been central to the kitchen from the very beginning, but there is equal attention given to fish and meat. The daily-changing tasting menu — priced at 75€ — is built around what is at its peak, reflecting a philosophy of ethical, seasonal cooking.
The wine list follows the same logic. Curated by the team, it focuses on small producers from Italy and France who work with minimal intervention. With around 500 labels, the cellar leans toward the Loire, Burgundy, Jura, Champagne and the Rhône. Nearly all wines are available by the glass.
BAK earned a Michelin Recommended distinction, a recognition that aligns naturally with its commitment to quality and integrity. It serves lunch on Saturdays and Sundays, and dinner from Wednesday through Sunday. For those with dietary requirements, the kitchen is accommodating — just mention them in advance.
