The story
At Choux in Amsterdam, the kitchen is built around vegetables. The team serves a five-course tasting menu (€82.50) from Tuesday to Saturday, with an early-bird three-course Theatre Menu (€52.50) for those who book before 20:00. The menu is vegetable-focused, so a vegetarian option is always available, and the kitchen can accommodate gluten, nuts, lactose, and vegan requests when communicated in advance.
Since early 2023, Choux has been producing its own natural seasoning sauce called 621 Ferments, made in partnership with Lindenhoff by upcycling waste streams into flavour. The restaurant also imports natural wine through its sister company Zuiver Wijnen, which runs a shop and wine bar a few doors down. This interconnected approach – from fermentation to wine – reflects a kitchen that thinks beyond the plate.
Choux earned a Michelin star in 2026, a recognition of high-quality cooking that stays true to its Modern French roots while putting vegetables at the centre. The dining room is intimate, with a maximum of eight guests per party, and the wine list is interesting enough to warrant a visit on its own.
