The story
At CUE, chef George Kataras and sommelier Mohamed Aous bring together two worlds under one roof. The duo met at three-starred Geranium in Copenhagen and later shook up Amsterdam’s dining scene at VanderVeen, earning a Michelin star within eighteen months. Now, at their own place on Utrechtsestraat, they continue that rebellious spirit.
The kitchen is led by George’s bold, fire-driven approach. Open flames shape the cooking, drawing on primal techniques to create a fusion cuisine that is refined yet unrestrained. The tasting menus – Volume 1 and Volume 2 – change with the seasons, and Sunday lunch offers a more relaxed entry point. Each dish is paired with a thoughtful selection of wines, with Mohamed focusing on New World bottles from Australia, South Africa, and the US, alongside natural wines, sake, and cider. Non-alcoholic pairings are equally considered.
Upstairs, the restaurant offers a sleek, intimate setting. Downstairs, a different world awaits: a listening bar inspired by Japanese 1950s vinyl bars. Here, a custom-built sound system spins only records – disco, jazz, R&B – while the cocktail menu reimagines classics with innovative techniques. The bar earned the title of Best New International Cocktail Bar at the Tales of the Cocktail Spirited Awards, and its late-night Japanese-inspired bar food is available until midnight.
