The Meaning of EN

In Amsterdam’s De Pijp district, EN is a Japanese kitchen and sake bar that draws its name from a handful of Japanese words, each carrying a distinct nuance: en as connection (縁), as celebration (宴), as support (援), as performance (演), and as a welcoming garden (園). That layered philosophy underpins everything here – a place built around shared meals, careful craftsmanship, and the kind of hospitality that makes solo diners at the chef’s counter feel just as at home as groups marking an occasion.

Chef Ken Osawa leads the kitchen, and his team’s work has been recognised by Michelin, which awarded EN a Recommended status in 2026. It is a quiet nod to the precision and consistency that define the restaurant.

Seasonal Kaiseki and À La Carte

The heart of the menu is a rotating seasonal kaiseki, available in three-, six-, or eight-course lengths. Every month the team reworks the offering, blending “meticulous Japanese craftsmanship, the finest ingredients, and pure seasonal flavours into a harmonious experience.” For first-time guests, the three-course kaiseki serves as a gentle introduction; those after the full arc can book the eight-course version. Vegetarian and gluten-free six-course menus are also available, and the restaurant asks guests to note any allergies in advance so adjustments can be made.

Beyond the tasting menus, there is an à la carte selection that includes sushi and sashimi plates. The kitchen also prepares monthly special menus on selected days, offering a more accessible way to taste the seasonal approach.

Sake with Purpose

EN’s sake list goes well beyond a simple pairing note. The restaurant stocks a wide range of premium sakes – including exclusive labels such as the EN-edition of Jōzen Mizu no Gokui – and positions them as a natural partner to the sushi and sashimi. The result is a meal where the drink list receives as much thought as the plate.

The space itself is intimate yet unpretentious. The chef’s counter offers a front-row view of the kitchen’s work; there are also tables for parties of two or more. Open Tuesday to Saturday from 18:00, with the last reservation at 20:00, EN operates on a pre-order basis for its course menus and requires a small deposit per person. The approach is straightforward: book ahead, arrive ready to eat, and let the seasonal produce speak.
