The kitchen draws heavily from a four hundred square metre rooftop garden that supplies fresh produce year round. Chef Lars Scharp directs the refined kitchen by blending classical French techniques with measured Asian influences. His team prepares each dish using precisely selected ingredients and plates them with clear visual intent. The culinary program rotates between three distinct tasting formats depending on the evening. Guests may choose the concise Experience menu, the fully plant based Green selection, or the extended Eight course Exclusive programme.
This tasting cuisine highlights precise flavour combinations rather than heavy sauces or theatrical presentations. Kalamansi pairs with kingfish, crushed peanuts, and leaf celery. White asparagus travels alongside rhubarb and vanilla almond dressing. Sea anglerfish rests in a beurre blanc enriched with courgette, laver, and cockles, while lamb arrives with wild garlic, morels, and lemon.
The dining room occupies the first floor of the Moxy hotel overlooking the IJ waterway. Large windows frame the harbour views while the interior maintains a calm and uncluttered layout.
