The story
Morris & Bella brings its plant-based fine dining vision to Amsterdam’s Spaarndammerbuurt, anchoring every dish around vegetables grown on Dutch soil. Morris leads the cooking while Bella curates the wine list. Their fully vegan kitchen follows a strict root to leaf philosophy, using wild herbs gathered from nearby fields to build umami depth through fermentation. House made miso and garums replace soy substitutes or meat analogues.
The tasting menu shifts with the harvest and offers four, five, or six courses priced from €51 to €71. A typical progression begins with celeriac and hazelnut dressed with lemon verbena and elderflower. Warm vegetable soups blend tomato and pak choi with cucumber and rose petals before moving to crisp cabbage, potato, and broccoli finished with pumpkin seed and radish.
Guests dine in a relaxed setting that opens onto a terrace during warmer months. Bella has assembled a European wine list featuring exclusively vegan certified bottles from small producers across the continent. The restaurant operates as a biodiversity ambassador and recently earned three radishes from the We’re Smart Green Guide for its circular operations. Partner growers in Amsterdam West supply salad leaves and edible flowers using strictly ecological methods.
