The story
Since 2019, Nazka has brought a contemporary take on Peruvian cuisine to Amsterdam’s Van Ostadestraat. The restaurant quickly earned a 9+ from Het Parool, and both the Michelin and Gault&Millau guides took notice—it remains a Michelin Recommended address ever since. At its core, Peruvian cuisine tells a story of connection, an intricate tapestry woven from African, Spanish, Chinese, Japanese, and indigenous traditions. Nazka carries this legacy forward, blending Peruvian-Latin heart with global flavors and techniques.
Chef Koosh Kothari was born in Gujarat, India, raised in Peru, and trained at Lima’s top culinary institutions—Le Cordon Bleu, Central, Kjolle, and Mérito. Under Virgilio Martínez, he dove deep into Peru’s diverse food landscape, later refining his craft as sous-chef at Mérito. After stints in India, Peru, and Mexico, he landed in Amsterdam. At Nazka, he brings all those influences together: Peruvian know-how, Indian memories, and the best local ingredients into a bold, generous cuisine with roots in Peru and flavors from all over.
Raul Lansink founded Nazka as a bridge between his Dutch life and Peruvian roots. After a career in advertising and consultancy, he felt a pull back to his grandmother’s cooking, leading him to open Amsterdam’s first modern Peruvian restaurant. His sister, Katinka Lansink, is a well-known ambassador for Peru’s food culture through her cookbooks Mi Casa Peru and Cocina Nikkei.
Nazka offers an a la carte menu and a four-course tasting menu. The team, comprised of over ten nationalities, reflects the city’s multicultural spirit. The atmosphere is breezy and full of soul—what they call Sabor a tu Vida, a taste of life at its fullest. It’s a place where flavors linger, the room glows with laughter, and time seems to pause.
