Ron Blaauw’s flagship in Amsterdam Oud Zuid is built on a simple conviction: dining out should be a celebration. There are no stiff tablecloths or hushed tones here; instead, the focus is on relaxed, culinary enjoyment.
This concept was born from a bold pivot. After years of running a two-Michelin-starred restaurant, Blaauw felt the need for a more casual, vibrant setting. Inspired by a trip to Copenhagen, he transformed his Amsterdam restaurant into the Ron Gastrobar concept: approachable, music-driven, and centered on high-quality dishes. The gamble paid off. Shortly after the relaunch, the restaurant was awarded a Michelin star—a recognition Blaauw has called his most meaningful, as it marked a turning point for Dutch gastronomy.
