The story
Tucked away on Vijzelstraat in the heart of Amsterdam, Senses is an intimate fine dining restaurant where gastronomy and hospitality have come together since 2011. Under the leadership of Chef Renaud Goigoux, the team crafts a sophisticated culinary experience rooted in flavor, creativity, and thoughtful service. The restaurant’s subtle yet elegant atmosphere provides the perfect backdrop for a meal that engages all five senses.
The cuisine at Senses draws inspiration from Japanese influences, French finesse, and the best of Dutch produce. The kitchen works primarily with ingredients from the region—including carefully selected meats and cheeses from Amsterdam—and places a growing emphasis on sustainability, even delivering products by bicycle to reduce their ecological footprint. Guests can choose from a chef’s menu of two to six courses or a carefully curated à la carte selection. This modern cuisine is offered seven days a week, with both lunch and dinner service.
Chef Renaud Goigoux grew up in Clermont-Ferrand, France, and began cooking at a young age. His path took him through kitchens in Australia, the Philippines, and Switzerland before he settled in Amsterdam in 2014. He worked at restaurant Daalder, became souschef at Breda, and later souschef at Rijks under Joris Bijdendijk, where he deepened his connection to Dutch terroir. In June 2023, he took the reins at Senses, where he now develops his own signature style—one defined by seasonality, color, and ingredient research. French sauce work, precise cooking, and balance are central, enriched by subtle Japanese accents and a strong focus on plant-based creations.
The restaurant’s recognition in the Michelin Guide speaks to the quality and consistency of the experience. The team strives to excel in both taste and service, serving seasonal and sustainable ingredients from the North Sea and Dutch soil.
Dining at Senses is an exploratory affair. The tasting menu highlights seasonal products from the North Sea and local farms, complemented by a fully plant-based menu and à la carte options. The bar offers a more relaxed setting with smaller bites, while private dining spaces allow for intimate gatherings. Whether you choose a multi-course chef’s menu or a selection from the à la carte, each dish reflects Chef Goigoux’s evolving vision. Every plate balances texture, flavor, and visual appeal—a genuine treat that surprises and delights.
Senses is open daily for lunch from 12:00 to 15:00 (last kitchen order at 14:00) and dinner from 18:00 to 00:00 (last kitchen order at 21:00). The restaurant is part of The Albus Boutique Hotel, offering a unique Stay & Dine arrangement for those who wish to extend their evening. Reservations for up to six guests can be made directly online; groups of seven or more require an inquiry. Dietary requirements, including lactose-free, gluten-free, vegetarian, and vegan options, are accommodated with advance notice—note that soy allergies cannot be catered for due to the kitchen’s use of soy products.
Senses has earned its place in the Michelin Guide, reflecting a commitment to refined modern cuisine and genuine hospitality.
