The story
For more than 25 years, Visaandeschelde has anchored the Scheldeplein in Amsterdam-Zuid as a destination for seafood fine dining. Restaurateur Michiel Deenik opened the doors on 30 March 1999, and the restaurant quickly earned a 9- from critic Johannes van Dam. Today, it holds a Michelin Recommended distinction, a recognition that matches the kitchen’s steady, season-driven approach.
The name is a direct reference to its location on the Scheldeplein. The restaurant’s identity is built around whole, sustainable fish sourced almost exclusively from the North Sea. The kitchen team breaks down each fish on the premises, using every part and wasting nothing. The seasons dictate the menu, which changes regularly to reflect what is freshest.
Guests can order à la carte or choose the monthly Chef’s Menu. A recent iteration of that menu opened with a smoked salmon rillette with Amsterdam pickles, moved through ling with fennel and beurre blanc, chipirones with mussel and tomato, and finished with a market-fresh fish main alongside asparagus and peas. The wine list leans toward the old world, and a paired selection is offered for each course length.
The dining room carries a “fresh-chic” look, and the service team is described as professional with an informal edge. In warmer months, the terrace opens onto the square. Michiel Deenik, together with his wife Saskia, is now preparing the next generation to carry the restaurant forward, aiming for another 25 years.
