This modern Dutch cuisine alternates between a rotating a la carte list and a fixed chef’s menu that shifts with the harvest. Guests encounter straightforward preparations that prioritize technique over ornamentation, including Baltic haring with beetroot and jenever, sea bass tiradito dressed with samphire, or Brazilian coconut soup featuring smoked pollock. A neighborhood offering called Diner de Quartier delivers starter, main course, and dessert for twenty nine euros fifty cents, maintaining the same standards for everyday plates.
