The story
Zoldering brings a relaxed approach to French and international cuisine from the attic of a characteristic building on Utrechtsestraat in Amsterdam. Chef Thomas Bron guides a kitchen where daily freshness dictates the menu, allowing guests to order bites, cold plates, and warm dishes in any sequence they prefer. Bron describes the cooking as modern and light, drawing on Dutch and international influences while prioritizing ingredients from the region. The menu avoids rigid course structures, favoring a straightforward layout of small bites, larger warm preparations, and sweets that change with the seasons.
