Dinner at Kaatje bij de Sluis is built around two set menus. It closes with a feuilletine of grapefruit, chocolate mousse and pink pepper.
The Evergreen menu (€107.50) is equally composed: goose liver and veal rouleau, cod with cauliflower and almond, lobster lasagne, venison from the Weerribben with pepper and Madeira, and a rosemary-citrus panna cotta.
