The story
At the southern edge of Breda, just off the A16, Restaurant Markant sits alongside the Mastbos forest. A large private car park and a garden designed for relaxed afternoons set the tone before you even step inside. The interior is warm, the service unhurried, and the ambition clear: to bring genuine hospitality back to the dining table.
Restaurant Markant is run by three people who know exactly what they want. Demi and Martijn are the sommeliers and hosts – a couple whose love for wine and gastronomy is matched only by their attention to detail. Chef and co-owner Mathijs Eggly commands the open kitchen. His cooking is rooted in classic French cuisine, with an emphasis on simplicity and respect for the main ingredient. He is known for his deep, powerful sauces – a hallmark of the kitchen’s philosophy.
The menu changes every eight weeks, offering a wide à la carte selection. Guests can build their own three, four or five-course meal, or let Mathijs choose with the “Chef’s wil is wet” surprise menu. What sets Markant apart is the table-side preparation: dishes are finished at your table, with a brief explanation of ingredients and why the chef chose them. It turns dinner into a quiet performance.
For those who want to see the action up close, the Chef’s Table – an oval table in front of the open kitchen – seats four or more and includes a complete arrangement with aperitif, a four-course chef’s menu, matched wines or alcohol-free pairings, and house-made limoncello.
Demi and Martijn have built a wine list of over 180 references, spanning classic estates and lesser-known houses from around the world. More than 20 wines are available by the glass, and the selection rotates regularly. Their work earned the restaurant a silver award from Star Wine List in 2025 for best small international wine list. The same care extends to non-alcoholic guests, with zero-proof beers, sparkling alternatives, and creative mocktails based on pinot noir, sauvignon blanc, or beetroot.
Restaurant Markant has been recognised by the Michelin Guide with a Recommended award for 2026, a nod to the consistency and personality of the kitchen. It is also listed by Gault&Millau and Lekker. But the real measure is the atmosphere: unhurried, personal, and built around the idea that dining out should feel like a genuine experience, not a script. Whether for lunch, a relaxed borrel with bites, or a full dinner, Markant delivers on that promise.
