The story
For forty years, Le Moulin has been a fixture on Dorpsstraat in Castricum, a place where hospitality and conviviality come first. Chef and owner Frans Glas leads the kitchen, while his sister Yvonne acts as hostess and vinologist, guiding guests through a carefully selected wine list. The restaurant’s name, Le Moulin, evokes a sense of tradition and warmth—qualities that have earned it a Michelin Recommended distinction for 2026.
The kitchen serves a Bourgondian, slightly idiosyncratic style rooted in the French-Flemish tradition—a version of classic French cuisine that is both recognisable and personal. Frans works exclusively with daily fresh seasonal produce, crafting a regularly changing menu of three, four, or five courses. A few specialities are also available outside the set menus, for those who want something different. The philosophy is simple: straightforward, honest cooking with the best ingredients.
The dining room has been updated with a contemporary interior, while the real draw in warmer months is the terrace garden at the back of the building.
