The story
Groenland in Driebergen defines itself through seasonal fine dining, where organic produce drives every decision. Owner Niels Oosthoek launched the restaurant in 2003 with these values embedded from the start. Chef Jurriaan Jonkers took over after joining as a teenager, applying classical techniques to craft light dishes with contrasting flavors. Seasonal gastronomy takes precedence, with plates arriving at a starter size to let guests shape their own rhythm. Korean beef tartare with citrus-ginger gel and soy mayonnaise shows how global flavors meet local sourcing. Kingfish follows with ponzu and calamansi beside a crisp of octopus. Vegetable dishes appear as an eggplant bastilla with lentils or fennel mousse with beetroot and green apple, while Gillardeau oysters finish the seafood range.
Guests select from a Mediterranean courtyard warmed by fireplaces or a botanical greenhouse crowded with plants and soft music. The main room offers a relaxed pace backed by attentive service.
