Restaurant Bouchot in Nuenen reopens its doors under Chef Bram Venhorst, whose modern gastronomy program emphasizes precision over complexity. The team previously worked at this exact address alongside earlier operators before launching their current concept in September 2025. Guests navigate the offerings through either a detailed à la carte list or a guided surprise progression. Every decision in the kitchen prioritizes ingredient integrity and balanced execution.

Signature Plates and Techniques

Refined cooking relies on restrained combinations rather than heavy sauces or excessive garnishes. A baked sole fillet rests alongside beurre blanc, fresh bouchot mussels, and tender leek preparations that highlight delicate textures. Later courses shift to land-based proteins, featuring pan-seared onglet paired with eggplant compote, roasted peppers, and a gentle heat element. Even the finish follows this disciplined approach, serving marinated yellow peach with fennel, mint, and a chilled champagne quenelle.

Room and Hospitality

Vintage furnishings and warm materials soften the clean lines of the contemporary dining space. Tessa van de Wouw directs both floor service and wine coordination, drawing from a curated collection of open bottles that prioritize curiosity over convention. She matches a crisp South African Chenin to lighter seafood preparations and suggests an Italian Barbera d’Alba for richer meat courses. Since September 2025, Chef Bram Venhorst and hostess and sommelier Tessa van de Wouw, both veterans of top-tier gastronomy, have been turning their dream into reality at a location near the village center of Nuenen, where chefs such as Gerard Wollerich and Soenil Bahadoer previously made their mark. They also happened to work there together several years ago. The modern dining room has a homely atmosphere, largely thanks to various vintage touches. The acoustics could use some improvement, as they are far from ideal. While the menu offers a generous à la carte selection, after our aperitif accompanied by some delicious gougères, we opt for the surprise menu. We start with pâté and croûte served with fig compote, sweet-and-sour onion cream, and a finely shredded salad. Next comes baked turbot fillet with a beurre blanc sauce, bouchot mussels – naturally – and leek preparations. Simple on the plate, yet incredibly refined in flavor. Award-winning sommelier Tessa recommends a Chenin Blanc from South African producer Rijk’s from their open wine list, and it hits the nail right on the head. The baked onglet for the main course is melt-in-your-mouth tender, while the accompaniment of eggplant compote, peppers, and a mild chili sauce elevates it to a refined Provençal dish. Following Tessa’s suggestion, we order a glass of Barbera d’Alba from producer Massolino. Not a wine from Provence, but certainly an excellent pairing. The flavorful dessert also appears straightforward: wedges of yellow peach marinated with fennel seeds, mint, and Thai basil, alongside a quenelle of champagne-infused ice cream. Yet the flavors truly impress. Bram and Tessa have big shoes to fill at this location, but judging by our initial experience, they are more than up to the task. Welcome to Lekker.
