He worked through establishments in the United Kingdom, New Zealand, and Brazil before settling in South Africa. Taking the head chef role in August 2017, he layers Brazilian and Italian influences onto a modern French foundation. The menu relies on fresh produce from Western Cape suppliers and shifts regularly to match market availability.
Sommelier Cameron Bishop designs the beverage selection to complement the kitchen’s rotating six course offerings.
