The story
At Zuid by Adrian Zarzo, the cooking is rooted in classic French technique, but the soul comes from the Mediterranean. Chef Adrian Zarzo, born in Valencia, brings a contemporary edge to the kitchen, offering menus and à la carte dishes that reflect both regional and global ingredients. The philosophy is simple: serve with respect, let natural flavours lead, and pack every plate with aroma.
The restaurant’s history is tied to the acclaimed Zarzo brand, originally opened by Jonnie & Thérèse Boer. Adrian Zarzo Habraken later took the reins, and today Zuid stands as a confident expression of his culinary vision. The dining room is complemented by Café Barolo, a wine bar next door where guests can enjoy smaller plates with a Mediterranean touch alongside wines from both the old and new worlds.
The menu offers a clear choice between a full dining experience and a more relaxed bite. Lunch and dinner tasting menus are available, with an all-inclusive option that pairs dishes with cava, water, wine, and coffee. For those who prefer to graze, the “Bites” menu runs throughout the afternoon and evening, featuring items like Iberico bitterballen with truffle mayonnaise, sashimi salmon with ponzu, and a selection of oysters served natural, gratinated, or with an Asian twist.
Standout à la carte dishes include a Wagyu beef carpaccio with rösti and curry cream, a bouillabaisse with rouille and parmesan toast, and a whole Côte à l’os for two. Main courses range from a classic sole meunière with fries to a vibrant paella with red mullet and arrow squid. The kitchen also offers vegetarian options like stuffed courgette flowers with cherry tomato and feta, and a pasta tartufo with fresh truffle.
Zuid’s recognition as a Michelin Recommended restaurant speaks to the consistency and quality of Adrian Zarzo’s modern French and Mediterranean cuisine. It is a place where fine dining meets a welcoming, unpretentious atmosphere, right in the heart of Eindhoven.
