In a quiet corner of Elburg, Superman brings the soulful, slow-cooked comfort of Taiwanese home-style cooking to the Netherlands. The restaurant’s story begins not here, but in the bustling streets of New Taipei City, where a small shop called “擲一碗小吃店” first opened in 1997. What started as a family business to support three daughters grew into a local institution, known for its deeply flavorful fish soup.
The second generation, led by chef Jiang Cang-ren—a former photographer who fell in love with cooking—took over the family legacy. Alongside his wife, Wu Yi-yun, he renamed the shop “Superman” and dedicated himself to preserving the honest, unpretentious flavors that had made it a neighborhood staple. Their philosophy is simple: sincerity, freshness, and depth.
The menu at Superman is built around a few carefully made dishes. The signature 100% sea bass broth is a labor of love, simmered until it turns milky white and rich, often paired with fish maw or pork trotters.
