The story
Ter:Govw takes its name from an old print in the Gouda city archives, where the town was once spelled Ter:Govw – a nod to the older name “Tergouw” used by locals until the 20th century. That blend of tradition and modernity carries into the kitchen, where the chefs combine French technique with Asian accents. The result is a menu that, as Michelin noted in 2025, “respects classics while keeping an eye on freshness and Eastern flavorings.”
The kitchen works with a single, seasonal menu called “Markt & Natuur” (Market & Nature), available in 4, 5, or 6 courses (€60–€80). Dishes change with product availability, but recent offerings give a clear sense of the style: yellowfin tuna Singapore-style with takuan and ginger; asparagus with salmon, lime leaf, and velouté; langoustine with som tam Thai, potato, and butter chicken spices; halibut with red cabbage, Jerusalem artichoke, and poultry; sirloin steak with shiitake, spinach, and mushroom XO; and a mango dessert with Thai basil, passionfruit, and jasmine. A vegetarian menu is available on request.
