In Groningen, along the Noorderhaven, Dokjard operates as both a bistro and a brewery. The team describes their kitchen as small and cozy, and this intimacy translates directly to the plate. The approach is straightforward: a menu that changes weekly with one or two dishes, keeping things fresh for the chefs and the guests.

Dokjard’s menu is built around variety. They intentionally avoid marking dishes with symbols for vegetarians, hoping that non-vegetarian diners will give those plates a fair chance. While they do not offer a fully vegan menu, their herbivore options are central to the kitchen’s philosophy. The bistro menu includes a range of starters, from a steak tartare with quail egg to a kingfish with carrot, turmeric, and miso. Main courses feature a ribeye with sage and broad beans, a polderhoen with duxelles and white asparagus, and a shiitake knödel with kimchi and szechuan pepper.

For those who prefer to leave the choices to the kitchen, there is a five-course "I can’t/don’t want to choose" menu. This is a selection of the kitchen crew’s favorites, served per table and made with daily fresh products. Desserts are a highlight, with all ice cream churned in-house from their own recipes, such as the strawberry & pistachio with frangipane and sumac-black pepper meringue.
