The story
Hanasato is the only restaurant in Groningen that cooks in the Washoku style, a culinary tradition recognised by UNESCO as intangible cultural heritage. The kitchen relies on traditional Japanese cooking techniques and pure, unadulterated ingredients, delivering flavours that are both healthy and deeply satisfying. This commitment to authenticity has earned Hanasato a place in the Michelin guide, a recognition that underscores the quality of its Japanese cuisine.
The menu is built around the principles of washoku: balance, seasonality, and respect for the ingredient. Hanasato is also the only Japanese restaurant in the northern Netherlands to serve original Shabu-shabu – a hot pot dish where paper-thin slices of meat and vegetables are swirled in a fragrant broth at the table. Every dish reflects the kitchen’s dedication to the “original flavours from Japan”, as the restaurant puts it, without shortcuts or adaptations.
The restaurant’s ambition is simple: Japanese food as it should be. The ambiance is understated and welcoming, and the service is friendly and attentive. Hanasato is open for dinner from Wednesday through Sunday, starting at 18:00. For groups of 15 or more, lunch or private dining on closed days is possible by reservation, though the restaurant strongly recommends booking in advance – especially for its signature Shabu-shabu experience.
