Owners Sieta Schellinger and Fareeda van der Marel operate the kitchen and service together. Sieta moved to Groningen from Friesland twenty years ago and spent seven years running Pernikkel. Fareeda is a native Groninger who previously crafted plant-based menus at Restaurant Achterwerk. Their partnership transforms a former neighborhood pub into a cozy venue that feels more like a home than a commercial dining room.
The menu adheres to a head-to-tail principle, occasionally featuring unusual ingredients drawn from the whole animal or vegetable. A fixed four-course structure ensures guests can take their time, while one dish changes weekly so the complete menu refreshes every five weeks. Current creations range from roasted wild goose paired with red onion gel to beekridder finished with a cherry blossom jus. Fermentation techniques appear in foams of fermented tempeh and mustard seed served over mushrooms. The French and international sensibility shines through in bold pairings, such as beekridder accompanied by a Japanese shisho sauce.
A strong focus sits on the drink program, particularly regarding alcohol-free arrangements.
