In Hulst, Restaurant Terroir Grand Cru brings together Chef Colin de Moor, host Bas Gräffinger, and sommelier Toby Thomaes to execute a refined French cuisine. The trio met at De Kromme Watergang before purchasing a property in early 2025 to realize their shared vision. Their philosophy centers on translating the soil directly onto the plate, prioritizing local ingredients and technical skill. This commitment to quality placed them on the Lekker500 Top 500 list for 2026. The restaurant occupies a position in East Zeelandic Flanders just north of the Belgian border.

Techniques and Seasonal Preparations

The menu shifts regularly while maintaining a focus on regional provenance and precise execution. Dishes include cod cooked at low temperature served with pumpkin mousse and a saffron sauce produced in Oude-Tonge. Raw marinated scallops appear alongside house-made kimchi with buttermilk ice cream and crispy thyme to balance acidity and texture. Zeeland lamb arrives with a spicy rendang crafted from lamb shank and a deep jus. These plates demonstrate how the French kitchen interprets the abundance of the surrounding countryside without losing structural clarity.

It was at restaurant De Kromme Watergang in Hoofdplaat that chef Colin de Moor and hosts Bas Gräffinger and Toby Thomaes, who also serves as sommelier, first met and gradually developed the desire to start their own restaurant as a trio. In early 2025, this wish became a reality when a property went up for sale in Hulst. The ambitious trio purchased the building with family help, and Restaurant Terroir Grand Cru saw the light of day. Small changes are being implemented slowly but steadily, and the venue is increasingly taking shape as they envisioned it. They support each other wherever possible, with Toby assisting Colin with mise-en-place alongside his duties as host and sommelier, while Bas takes care of the administration in addition to hosting. The kitchen serves dishes inspired by French cuisine, making extensive use of local produce. In every dish, we taste the skilled hand of the chef. We enjoy low-temperature-cooked cod with pumpkin mousse, surrounded by a velvety saffron sauce made with saffron from Oude-Tonge and served with Zeeland mussels. The raw-marinated scallop with homemade kimchi, buttermilk ice cream, crispy with thyme, and mini cress from the nearby area also delights. A touch of zest, a hint of acidity, and beautifully presented. Toby’s wine selection, a Mâcon-Villages from Domaine des Gandines made from Chardonnay grapes, pairs perfectly with it. The Zeeland lamb is accompanied by a spicy lamb shank rendang and a deep, robust jus. We finish with a rhubarb compote, white chocolate cream, salted lemon and yuzu sorbet, and Thai basil foam. Conclusion? Another Zeeland pearl in the firmament. Welcome to Lekker.
