The story
In 2001, Sonja and Nico Boreas opened Restaurant Boreas in Heeze, earning two Michelin stars before selling it in 2018. Their next venture, Restaurant Sabero in Roermond, also received two stars. In March 2023, they closed that chapter and began a new one: a small living-room restaurant in Leende, simply called Sabero.
Nico’s cooking is a study in balance and detail. His style blends Modern Cuisine with Asian Fusion influences, drawing from the seasons and international flavours. He combines classic techniques with modern methods, always with the goal of extracting maximum taste from every ingredient. The menus evolve constantly, driven by what is fresh and what inspires him.
Sonja leads a small team that makes every guest feel at home. They pair each dish with carefully selected wines, ensuring the evening becomes a warm memory. The atmosphere is intimate, personal – fine dining without pretence.
Sabero in Leende was awarded a Michelin star in 2026, a testament to the consistency and quiet excellence that the Boreas family has delivered for over two decades. The recognition fits naturally: this is cooking that speaks for itself.
