The story
Willem Schaafsma first set foot in the kitchen of Restaurant Eindeloos as a 16-year-old intern. He knew then that this small, historic building in Leeuwarden – a former shoemaker’s workshop turned restaurant – was where he belonged. In 2009, that dream became reality when he took over as chef-owner. Today, he runs it with two partners, chef Jesse and maître Meerten, a team he describes as sharing the same dream: to get a little better every day.
The restaurant's cooking philosophy, which Schaafsma calls "elegant simplicity," is built on a deep respect for seasonal, local ingredients. The son of a dairy farmer, he works directly with Frisian farmers, hunters, fishermen, and cheesemakers. The kitchen is classic French in technique, with deep, layered flavors and a modern presentation, but it also nods toward Asia – bringing a subtle, worldly edge to the dishes. The primary format is the Proeverij Eindeloos, a surprise tasting menu that changes with the catch and the harvest. A sample progression might include salmon with broccoli and mandarin, quail with wild shrimp, and veal with beetroot terrine.
The setting matches the food’s quiet confidence. Inside, the modern interior integrates photography by Henk Bleeker. Diners consistently praise the knowledgeable, warm service and the thoughtful wine pairings. It is a place where the ingredients and the wine are the focus, not the ego of the chef. This low-key, dedicated craft has earned Restaurant Eindeloos a Michelin Recommended award, cementing its reputation as one of Friesland’s finest kitchens.
