The story
Contraste in Leiden frames French and international cuisine around a seasonal garden and a distinctive barbecue technique. Chef Kenneth Tjong Ayong and his partner Paulien van Wieringen opened the doors in 2024 after years managing a neighboring bistro. They replaced the standard menu card with a rotating Chef’s menu driven by daily harvests from their plot in Hoogmeade. Winter plates rely on preserved celeriac and kale, while summer service highlights fresh tomatoes and edible flowers.
The kitchen balances rich proteins with bright vegetables using smoke and direct heat. Barbecued mackerel arrives alongside pumpkin cream and toasted hazelnuts, while quail rouleau pairs with maize butter and crisp chili strips. This grounded approach earned consistent placement in the Lekker500 Top 500. Sommelier Paulien van Wieringen matches these French and international cooking styles with biodynamic bottles poured by the glass.
The wooden building sits directly on a canal, offering a sheltered terrace for warmer months. Inside, light floods the room through large windows that frame the water outside. The staff maintains a relaxed pace that encourages conversation rather than rigid ceremony. Kenneth and Paulien built the concept on a simple motto: let guests celebrate everyday moments.
