Beluga Loves You, a Michelin-starred restaurant in Maastricht, is built on a simple conviction: the best ingredients come from nearby. Chef Servais travels regularly to suppliers, ensuring every product is handled with respect for nature. The kitchen’s mission is to let regional bounty shine through dishes that are fresh, direct, and never overwrought. Garnishes stay subordinate to the main ingredient; nothing is wasted.
The restaurant’s sourcing reads like a map of care. Caviar comes from a Caspian Sea sturgeon farm where fish live in a delimited wild area, feeding naturally. The breeder slaughters only after selling the meat, so nothing is lost. At Beluga, only the core of the kilo tin is served—the highest quality.
Truffles arrive from Cianni Tartufi, a family business in Italy’s Marche region. A truffle dog named Dolly finds them in a farmer’s planted forest. Two days after ordering, the truffles are in Maastricht.
Oysters come from Zeeland, six-year-old triploids that can be eaten year-round. They are cleaned in pure seawater before delivery. The oyster has become the restaurant’s signature dish, thanks to a special preparation technique.
Seasonal tasting menus are the heart of Beluga Loves You. The BLY Menu offers four to eight courses for lunch or dinner, with options like Wagyu beef A4 with Irish mór oyster, beetroot, and caviar, or Geul valley lamb with romesco, gnocchi, and aubergine. The Servais Selection provides a refined introduction: four courses with aperitif, matching wines, and table water, all for €155. A business lunch is served within an hour for €75. The cooking is precise, the flavours clear—a celebration of the region’s best.
