The story
At Gaar, the philosophy is simple: flavor, quality, and love. Since 2019, this restaurant in Meerssen (just outside Maastricht) has been proudly listed in the Michelin Guide, earning a recommendation that speaks to its consistent excellence. The kitchen is led by chef and owner Joachim Müller, who cooks with passion and expertise, sourcing high-quality ingredients locally whenever possible.
The menu is rooted in classic cuisine, with clear influences from Italy, Spain, and a playful nod to the East. Two signature dishes immediately set the tone: a house-made terrine made with Limburg pork or regional wild boar, and a Crispy Tortilla featuring Asian-marinated tuna. These plates showcase the kitchen’s confidence in balancing timeless French techniques with bright, international flavors. Guests can expect a six-course meal that might highlight sea bream and shrimp ravioli with beurre blanc, or duck leg with a vadouvan-based sauce.
The wine list is curated with equal care. The team searches for true terroir wines with a story—bottles that perfectly complement Joachim’s dishes. Wines are priced with a fixed margin on the purchase price, allowing guests to enjoy exceptional bottles at a fair price. A variety of wines by the glass is also available.
The atmosphere is described as fine dining in a casual setting. Tucked away near a roundabout by the highway, Gaar surprises with its warm decor, attentive staff, and serious cooking. It’s a place where the food does the talking, and the team—Joachim, Myrthe, and the Gaar team—welcomes you like family.
