The story
L’Auberge sits within the grounds of Château Neercanne, a 17th-century estate on the edge of Maastricht. The restaurant’s own garden, planted behind the building, supplies much of the kitchen’s produce. Guests are invited to wander through the vegetable beds and beehives, where volunteers tend to the plants and the bees that produce the restaurant’s honey.
Chef de Cuisine Remco Pfeifer leads a team that works with regional, predominantly organic and seasonal ingredients. The kitchen follows an artisanal French approach, preparing classic dishes with a clear, modern touch. The menu changes with the seasons, making use of what the garden and local suppliers offer.
L’Auberge offers a choice of three courses (€54) or four courses (€69 per person). The current selection includes starters like coquille with carrot vinaigrette and parsley, or beef tartare with egg yolk cream and green asparagus. A vegetarian option features a chestnut mushroom pâté with roasted sourdough. Main courses range from haddock with brandade and spinach to braised beef with Madeira, or a risotto made from Louwberg grain with Montbéliarde cheese and almond. Desserts highlight strawberry with cold sabayon and vanilla, or a classic Dame Blanche.
The restaurant accommodates dietary needs, offering vegetarian, vegan, gluten-free, and dairy-free options, among others. Many dishes are locally sourced and organic.
L’Auberge holds a Michelin Bib Gourmand, awarded for good quality, good value cooking. The honour reflects the restaurant’s commitment to fresh, seasonal French cuisine served in a relaxed, welcoming setting.
