Chef Björn Dijkstra anchors the kitchen with a strict focus on seasonal produce from local Limburg farms.
Dijkstra launched the Dobbel Good menu to honor the site’s former Dobbel Aajt stout. Each dish pairs deliberately with a glass of wine or a crafted non-alcoholic cocktail chosen by sommelier Adem Çiçek. The French kitchen operates alongside broader international influences, favoring clean flavor lines over heavy sauces. Fermented plums and nashi pear similarly sharpen a raw saku tuna plate.
