Les Salons sits within the grounds of Château St. Gerlach, a historic estate just outside Maastricht. The restaurant describes itself as a “casual fine dining experience,” where the kitchen gives a fresh twist to tradition. The atmosphere is refined yet welcoming, with outdoor seating that overlooks the estate’s gardens—a fitting backdrop for a meal built on ingredients grown on the property.

The Cuisine

The menu is firmly rooted in Modern French techniques, but the heart of the cooking is local and seasonal. The kitchen works with produce from the estate itself, from herbs and vegetables to honey. A tasting menu might begin with Coquille, served with asparagus ice, beurre noisette, and citrus. Next comes a tartare of veal from Margraten, topped with egg yolk and pastrami, bound with a vinaigrette of veal stock. Sea bass arrives with wild garlic and a cream of Dutch shrimp. For the main course, lamb from the Geuldal valley is paired with Limburg asparagus, peas, and eggplant. Dessert brings rhubarb with magnolia, white chocolate, and elderflower ice cream—or, for those who prefer it, a selection of regional cheeses with nut bread and honey.

The seasonal dishes are crafted from ingredients that are “grown on our estate,” as the team puts it. From the moment you arrive at the estate of Château St. Gerlach, you experience a touch of magic: the driveway winds through lush gardens toward the imposing castle. The terrace is picturesquely situated next to the Baroque monastery church of Saint Gerlach. Inside, grandeur reigns: classic salons with rich details, although the tables are placed somewhat close together. The kitchen, led by Chef Guido Le Bron de Vexela, focuses entirely on local produce. A large portion of the ingredients come from their own vegetable garden, orchard, and vineyard. Guido works according to the zero-waste principle. Amuse-bouches such as a cucumber and celery brunoise on cream made from local Sjevraoje goat cheese, and an artistic croustade filled with herring and green herb cream, taste promising. The menu offers a journey through Limburg and beyond. Highlights include a mosaic of Dutch Yellowtail Kingfish in a magnolia and radish vinaigrette, along with a citrus gel and a kimchi cream. And a flan of Limburg mozzarella with red beets from their own vineyard, house-churned sorbet of beetroot, Limburg cherries, and green apples from their own tree. All surrounded by a dressing of green herbs and aceto balsamico. We have never tasted such delightful beet before. We stay local for the next course. Filet américain of Limburg veal with salsa verde from their own WIJland, marinated cauliflower, and onion rings. With a dressing of green herb oil, red wine sauce, and mustard seeds. The pièce de résistance is a Black Angus entrecôte from the Ardennes. Accompanied by a beef bonbon folded in cabbage leaves, caramelized shallots, carrots from their own garden, and La Ratte potatoes. All finished off with a rich Bordelaise sauce. We pair this with a lovely glass of full-bodied red Cimabella from Bierzo, Spain. Les Salons combines gastronomy with history and Limburg pride. An experience you not only taste, but also live.
