The story
Les Tchéroux brings a relaxed bistro concept to a repurposed sailing clubhouse on the Meuse riverbank near Maastricht. Founders Géraldine Sarlet and Franck Circhiaro transformed the historic hull into a moored dining space that balances casual comfort with a beautifully tuned interior. The menu follows a neo-canteen playbook designed for sharing, drawing clear inspiration from Ottolenghi style vegetable forward cooking. Franck Circhiaro handles the bistro kitchen with a focus on generous, accessible fare that avoids heavy formalities. Thinly carved manchego arrives alongside melting Teruel ham, both resting beside from scratch sundried tomatoes paired with fresh burrata. A toasted brioche bun cradles shredded beef that stays juicy enough to require careful handling at the table.
